Chicken with Asparagus & Mushrooms {Recipe}

I first discovered this recipe from my friend Lisa who now lives in Chile. She is quite the cook and when she shares a recipe, I know I will love it. The recipe comes from Jen's food blog which she adapted from one of my favorite cooks, Ina Garten, so you know it's really good. This one-dish casserole is a comfort dish that's a favorite during cool nights. Just toast up a French baguette to soak up all the creamy goodness and you are set. I made this last Sunday as I was craving comfort food and hoping that Fall weather will be here sooner rather than later.

Important Note:

Here a few modifications I tend to make if I can't find morels at the grocery store or if I happen not to have sherry in my pantry.

For the morels, I substitute them with a container and a half of cremini or baby bella mushrooms, whatever you want to call them.

And if I don't remember to stock my pantry with a good sherry, I substitute either the full amount with apple cider, or in half if you are using apple cider vinegar.
