Easy Halloween Pumpkin Blueberry Pancakes

These are the easiest and are super simple to make with only four main ingredients. If you are entertaining a large crowd, you can simply double or triple the recipe, make them in advance and refrigerate up to 24 hours or freeze them. Warm them up in a preheated oven either way at 200F for a few minutes. These will definitely be on my menu for my Halloween Brunch Soiree.


Here's the recipe:

Halloween Pumpkin Blueberry Pancakes 
(yields about 10)

+2 cups buttermilk complete pancake mix (I like Aunt Jemina's)
+1 1/2 cups milk
+2/3 cup pumpkin puree
+1 pint of blueberries
+pancake molds
+spray butter
+unsalted butter

1// In a large bowl, whisk the pancake mix, milk, and pumpkin puree. Add more milk if needed. 
2// Heat your non-stick skillet on medium-low heat. 
3// Add about a tablespoon of butter and melt the butter in the skillet. 
4// Place your molds in the skillet and use a spray butter to coat the insides of the molds. 
5// Spoon pancake batter inside the molds and sprinkle with fresh blueberries. 
6// Cook until bubbly on top. 
7// Remove the molds and flip the pancakes and cook for an additional 1 to 2 minutes until done. 
8// Repeat the process until your pancake batter runs out.

Serve with maple syrup or your favorite pancake syrup.
