Breakfast in Bed {with Homemade Vanilla Scones}

This is what weekend mornings should look like in my book. And although on this day, it happened to be a Monday, I'll actually take them no matter what day of the week it is. We had a long weekend so I definitely made an effort to take full advantage of it. In this instance, our morning in bed was then followed by macaroons from Trader Joe's and later a trip to the grocery store.
Moments such as these are rare for me. Normally the kiddos jump in bed with us and there's hardly time to enjoy my morning coffee with a magazine or book. One of my goals this year is to make more time for little moments such as these. They are good for the soul especially when the hubby is gone so much. And it seems like my Madewell heart leggings were meant to be paired with my West Elm heart mug. The only time to pull this off of course would be around Valentine's day, and I think we are close enough that I'm safe being all matchy-matchy. Anyway, what you don't see in this picture is that the kiddos were indeed in bed snuggling themselves with the fur blanket and entertaining themselves with the iPad and tv. I think you can see one of their feet in one of the pictures above. What mattered was that I got my little moment in and they were happy by my side. It was like a family affair. The life of a mommy right? Except that they are not allowed to bring food or drinks {only water} to any room other than the kitchen or dining room of course. Mommy broke the rules.
Homemade Vanilla Scones {adapted from here}
Ingredients
2 cups + 1/4 cup all purpose flour
1/4 cup sugar + 1 packet of Dr. Oetker vanilla sugar
1 tablespoon baking powder
1/2 teaspoon sea salt
12 tablespoon unsalted butter, cold and diced
3 large eggs
1/2 cup heavy cream
2 teaspoons vanilla extract
1. Prehead oven to 400 degrees F.
2. Combine flour, sugars, baking powder, and salt using the paddle attachment of your electric mixer.
3. Cut the cold butter and add it to the dry ingredients on low speed. Mix butter until the dough is the size of peas.
4. In a separate bowl, mix the eggs, heavy cream, and vanilla extract.
5. Turn mixer on low and slowly add the wet to the dry ingredients.
6. Pour flour on a dry surface. Your dough may be sticky so coat your hands with flour as well. Sprinkle more flour on top of your dough and shape to a round disc.
7. Cut the dough in 8 wedges.
8. Place the wedges on a cookie sheet lined with parchment paper or a baking mat.
9. Bake for 14-17 minutes.
10. Add a vanilla glaze if you would like when you get them out of the oven and they are still warm. I opted not to as the kids enjoy them with honey or jam.
