Homemade Granola {a la Haven's Kitchen}


About a week or so ago, I ordered the most delicious granola from Haven's Kitchen in NYC. It's addicting and a bit expensive. Thanks to a reader I found a recipe that is a good substitute although the one from Haven's Kitchen is still superior in my opinion. Here's what you do {make sure you read the instructions from start to finish before you begin}:

Ingredients
5 c. whole rolled oats
1 c. coconut chips {I found them at Trader Joe's}
1 c. almonds, chopped
1/4 c. pepitas {pumpkin seeds}
1/4 c. sunflower seeds
1/8 c. to 1/4 c. sesame seeds
1/2 c. neutral flavored olive oil
1/2 c. maple syrup
1/2 t. salt
1 1/2 t. cinnamon

*Add the fruit once you bake the granola
1 c. raisins
1 c. dried cherries

1. Preheat oven to 350°F.
2. In a large bowl stir together oats, nuts, seeds, salt and cinnamon.
3. Mix your olive oil and maple syrup and then drizzle over the oat mixture and fold with a spatula to combine well.
4. Line 2 of your baking sheets with parchment paper.
5. Spread granola evenly in baking pans and bake in upper and lower thirds of oven, stirring frequently and switching position of pans halfway through baking, until golden brown, about 20 minutes. The recipe calls for 35 - 45 minutes, but I only cooked mine for 20 minutes.
6. Add the coconut chips at the last 5 minutes of your baking.
5. In large bowl combine the baked granola with dried fruits and cool, stirring occasionally for 1 1/2 hours as it cools.

Serve with berries and honey greek yogurt. So good!
