Healthy Eats
One of my goals this year is to stay fit and eat healthy. My breakfast has consisted of my homemade granola with berries and honey greek yogurt. My lunch lately has been this quinoa and arugula salad with a lime vinaigrette {last photo}. I usually have a light snack before dinner that has consisted of this Alpine Lace swiss cheese, cherry tomatoes, basil, and sometimes I'll throw a meat like prosciutto if the hubby is joining me on my snack. The great thing about eating healthy is that I feel better and I stay fueled to tackle the day's to-dos. A plus of eating healthier is also getting my body back to looking better for swimwear season.

I think the first two photos are self-explanatory and don't need recipes, but I'll share my go-to lunch recipe. If the salad isn't enough, I'll toast a slice of wheat bread and add 1/2 avocado sliced with a bit of kosher salt.
Quinoa & Arugula Salad with Cherry Tomatoes, Chickpeas
{recipe adapted from here}
2 cups of cooked quinoa, chilled or room temperature
2 cups of arugula
1 cup of cherry tomatoes, halved or quartered
1 can of chickpeas, rinsed
1/4 cup of diced red onion
Lime Vinaigrette
Juice of 2 limes
3 tablespoons of olive oil
salt and pepper to taste
