Farewell Summer + Berry Lime Coconut Ice Cream
Here it is. The last day of summer. I thought I would share some recent photos of how we spent our late summer days.

A couple of weeks ago I made this ice cream and decided to plate it using coconuts as bowls. The tricky part was cracking them, but they do make quite the fancy and summery presentation. Perfect as dessert bowls. Thank you Pinterest and Kara for the idea. It didn't take long for the ice cream to start melting on this late summer day, but we still enjoyed it. This homemade ice cream with berries, coconut milk, and lime juice has become a summer favorite. The coconut adds sweetness and the lime juice makes it refreshing - the perfect combination. I'll definitely be adding this recipe to my summer repertoire.
Berry Coconut Lime Ice Cream8 oz mixed berries (raspberries, blackberries, blueberries, strawberries)juice of 1/2 lime, freshly squeezed1 teaspoon vanilla4 tablespoons sugar, divided1 can coconut cream1 1/2 cups whole milktoasted coconut chips, to servelime wedges, to serve or garnish1. Mix together the berries, lime juice, 1 tablespoons of sugar, and vanilla extract. Let sit for 15 minutes, then mash roughly with a fork. Set aside.2. In a separate bowl, mix together the coconut cream, whole milk, and 3 tablespoons of sugar. Fold in the berries with the juice.3. Taste the mixture, and if you find it needs more sugar add a tiny bit more.4.
