Queso Fundido with Chorizo

If you love Mexican food or nachos for that matter, you will love this recipe. A few weeks ago we had guests and friends over for dinner and we cooked one of our favorite Mexican meals - carne asada tacos with all the yummy toppings, and as the appetizer we made this Queso Fundido. And really this queso could even be used as a topping on some tacos. So good! It was definitely a winner and a recipe I will tuck away for college football games, Super Bowl parties, Cinco de Mayo celebrations, or any night we feel like having tacos.Queso Fundido with Chorizoserves 8 1 small tomato, chopped1 serrano chile, seeded, chopped1 tablespoon dried Mexican oregano or 2 tablespoons chopped fresh oreganoKosher salt8 ounces coarsely grated mild yellow cheddar8 ounces coarsely grated Monterey Jack1 tablespoon all-purpose flour1 4-ounce link fresh chorizo or hot Italian sausage, casing removed1/2 cup minced onion1/2 cup lager {such as a Corona}Tortilla chips1. Mix tomato, chile, and oregano in a small bowl. Season with salt; let salsa stand for 30 minutes.2. Meanwhile, toss both cheeses with flour in a medium bowl.3. Cook chorizo in a medium saucepan over medium heat, breaking up with a wooden spoon, until it begins to render, about 1 minute.4. Add onion and continue cooking until chorizo is cooked and onion is soft and translucent, about 5 minutes.5. Transfer chorizo mixture to a small bowl; return saucepan to heat.6. Add beer; simmer, stirring occasionally and scraping up any browned bits. Whisking constantly, add cheese mixture a 1/4-cupful at a time, allowing it to become blended and smooth between additions.7. Stir in chorizo mixture or set aside if you have guests that are vegetarian.8. Using a slotted spoon, spoon salsa over queso. Serve in skillet with a basket of tortilla chips on the side.DO AHEAD Queso can be made 30 minutes ahead. Let stand at room temperature.
