Pudding Pops + A Trip To The Strawberry Farm

Ever since the kids were tiny, I've made it my mission to show them where food comes from. I love visiting our local farms so that they can experience the joy in picking our fruits and learn about how food grows. I don't want my kids growing up thinking that everything comes from the supermarket. So we take advantage any chance we get to visit our favorite farms.And since I love cooking and baking for my family, anytime I can get my hands on fresh and locally-grown products makes me happy. We are in the middle of strawberry season so a trip to the farm to pick our strawberries was in order.In my quest to a healthier lifestyle, I try to have our fridge stocked with fruits and healthy or smart snack options. And since we are busy around here, I've been wanting to add a super simple and easy snack, besides our regular fruit popsicles, for the warmer months ahead. And that's when an idea came to light this weekend as I was catching up on my Martha Stewart magazine. Pudding pops! And because anything gluten-free is better for you, Kozy Shack® Simply Well Rice Pudding it was. So I emptied my pudding containers into popsicle molds and I decided to mix some sliced fresh strawberries to them since I had buckets of them. They are delicious and festive too for the Memorial Day holiday coming up. Add some blueberries along with the strawberries to go with the spirit of the holiday and they will surely be a favorite snack or dessert for kids and even the adults.This is how I'm taking my family's snacking to another level. And guess what? The kids loved them too. Next time, I'm planning on adding sliced fresh peaches or some pineapple and coconut or maybe even some cold stewed rhubarb. Drizzle some honey after you pull them out of the molds and you can add some shredded sweet coconut or some granola to make them into pudding parfait pops. I can think of so many varieties. The options are endless. Get creative!
