What I didn't know was the secret to her "homemade" donuts which I learned years later - Pillsbury Buttermilk Biscuits. And for the last couple of years I've continued her tradition and the kids love them.This time though, I thought it would be fun and delicious to fill them with a homemade strawberry jam and a maple filling for a seasonal twist. They are so easy and simple to make that you can add them to your holiday brunch repertoire. Southern Homestyle Buttermilk Biscuitsvegetable oil, for fryingsugar to coatHeat the oil in a pan. Make sure that you pour enough oil to properly fry the biscuits. Once the oil is hot add the biscuits, three to four at a time. Fry them for a couple of minutes on each side until golden brown. Cover a plate with paper towels. Using a slotted spoon, remove from oil and place on the paper towel covered plate. Let cool for until cool to touch and coat them with sugar.Strawberry Jam Filling4 1/2 cups strawberries, hulled and quartered2/3 cup sugarjuice of 1 limeTo make the jam:In a large skillet, combine the strawberries, sugar, and lime juice. Cook over medium heat, stirring and smashing berries often, until the mixture has cooked down and thickened, about 10 minutes. Set aside to cool completely.Maple Filling1 quart whole milk2 oz cornstarch7 oz sugar½ tsp salt3 large eggs2 oz butter½ cup maple syrupTo make the maple filling:Pour the milk into a heavy-bottomed pot and bring to a boil. While the milk is heating, in a large bowl, whisk together the cornstarch, sugar, salt, and eggs. Once the milk is boiling, pour about a third of it into the egg mixture, whisking constantly. Pour the egg mixture back into the pot with the remaining milk, whisking constantly. Cook the mixture over medium heat, stirring constantly, until it comes to a boil and thickens. Remove from the heat. Stir in the butter and maple syrup. Set aside to cool completely.
