Winter Holiday Salad

Because we need to balance all the pie and calories we'll soon be consuming, here's a perfectly delicious, healthy salad. Serve it as a side during Thanksgiving or add leftover turkey meat for a balanced meal.

Winter Holiday Salad2 persimmons (or blood oranges), sliced1/2 cup Manchego cheese, cut into small pieces {or goat cheese}1/4 cup toasted pistachios, coarsely chopped4 cups bitter greens (such as curly endive, or endive with radicchio)2 cups mixed sweet apple slices1 cup seedless red and green grapes4 figs, quarteredpomegranate seeds, for garnishFig–Dijon Dressing2 lemons, for juice1 cup fig preserves2 teaspoons Dijon mustard1/2 cup olive oilkosher salt and freshly ground black pepper, to tastePrepare salad. Slice persimmons. Cut cheese into small pieces; chop nuts.Arrange bitter greens on serving platter; top evenly with persimmons, apples, grapes, cheese, and pistachios. Drizzle with 1/2 cup Fig-Dijon dressing (recipe continues).Prepare dressing. Squeeze lemons for juice (1/4 cup). Combine figs, lemon juice, and Dijon in a medium bowl; whisk until blended.
