My Favorite Salad, Lately
I've made this salad three days in a row already for lunch this week. It came about just adding things I had in the fridge and as it turns out, it's delicious and super healthy. On one of those days, I added leftover chicken breast from dinner, and it was so filling and good. My favorite part is that eating this healthy for lunch makes me not feel so guilty if I indulge at dinner time. And tonight since it's Friday, I'm indulging with our homemade pizza for dinner. Oh yes, and a glass of wine. Cheers!
Hummus Avocado Arugula Salad1 bunch of arugula1 bunch of watercress1/4 cup chickpeas1/4 cup hummus1/2 avocado, dicedred onion, thinly sliced1/3 cup fresh carrot chipschicken breast, sliced {optional}olive oiljuice of 1/2 lemonsalt and pepper to tasteIn your bowl, add the greens and drizzle with olive oil. Top with chickpeas, avocado, hummus, carrots, and red onion. Add your chicken or protein, if desired. Squeeze half a lemon. Finish with a light drizzle of olive oil. Add salt and pepper to taste.
