Pumpkin Banana Muffins
I had some very ripe bananas, so I decided that instead of throwing them away,
AJ and I could make some muffins.
This muffin recipe makes really moist and delicious muffins.
They will be great for breakfast tomorrow morning.
Pumpkin Banana Muffins
Yields 12 muffins
Ingredients
1/2 cup mashed banana
1/2 cup canned pumpkin
1/2 cup sugar
1/4 cup milk
1/4 cup vegetable oil
1 egg
1 3/4 cups of flour
2 tsp. baking powder
1 tsp. pumpkin pie spice (but I used cinnamon because I was out of this)
1/2 tsp. table salt
Topping:
1/2 cup brown sugar
1/2 cup chopped nuts and/or oats
1/2 tsp. pumpkin pie spice (I left this ingredient out)
Mix all ingredients together well. Spoon into greased muffing tins or into muffin liners. Top each with 1 tablespoon of the topping mixture. Bake in preheated 375 degree oven for 20 minutes.
