Dinner for Two {Prosciutto & Arugula Pizza}


Last Saturday, we entertained some friends and we decided on having a casual and rustic meal. So we made our favorite pizza recipes. This one with prosciutto and arugula happens to be our absolute favorite pizza recipe and it brings many memories of our time in Monterey, California. We couldn't get enough of it so the hubby and I made it again the next night for dinner. 

Ingredients
+ homemade pizza dough* (or store-bought)
+ 1/4 cup of homemade pizza sauce, recipe follows
+ 1 package of prosciutto (about 6 pieces)
+ 1/2 lb. of fresh mozzarella, sliced
+ 1/2 cup of freshly grated parmigiano-reggiano
+ 1/4 of a red onion, thinly sliced
+ 2 cups of fresh baby arugula, drizzled with olive oil, kosher salt, and pepper

Preheat your oven and pizza stone to 480F. Roll your dough. Place dough on preheated pizza stone and brush olive oil on the dough. Spread a thin layer of pizza sauce. Cover the dough with prosciutto, leaving about a 1-inch border around the dough. Add mozzarella cheese, red onion, and cover with half of the grated parmesan cheese. Sprinkle a bit of kosher salt. Bake in the oven about 8 minutes until dough is crispy and your mozzarella cheese starts to brown a bit. Once out of the oven, cover the pizza with the arugula mixture. Sprinkle the rest of the grated parmesan cheese on top and enjoy!

Pizza Sauce
+ 1 (14 oz) can of whole San Marzano tomatoes, drained
+ 1/2 tsp. of dried oregano
+ 1 tbsp. of olive oil
+ kosher salt and pepper

In your food processor, add all of the ingredients, until coarsely chopped. Taste the sauce, and add more salt and pepper if needed. I freeze the leftover sauce or make spaghetti noodles for the kids and add the sauce with some freshly chopped basil.

* Dough, I use the dough recipe in this recipe which makes 4 and I freeze the leftover dough.
