Blueberry Bread

blueberrybreadI'm sure you've guessed it by now that I'm a bread eater. I also love to bake which mostly happens around the holidays, but with all the fresh summer fruit I find it quite relaxing to get in the kitchen and whip up something sweet. I actually don't mind the mess that comes with baking. I'll put on Pandora on my iPhone {it's probably playing Lana del Rey} and plug it into my Tivoli Radio, while I peacefully sip my morning coffee. The kiddos are having their breakfast so they are content and probably watching something like Curious George on their iPads. These types of mornings are my favorite. And if it's pouring rain outside, well it adds to the mood of my morning play. On most of these casual mornings, you'll probably still find me in my pajamas. But who can blame me right? I'll skip breakfast and indulge in a small slice {or two} of this delicious homemade bread with my coffee. I promise to share something savory next.Blueberry Bread1 1/2 cups all-purpose flour3/4 cup white sugar1/2 teaspoon kosher salt2 teaspoons baking powder1/3 cup vegetable oil1 egg1/3 cup milka dollop of vanilla Greek yogurt1 1/2 cup fresh blueberries1 teaspoon Vanilla extract1. Preheat oven to 400 degrees2. Grease or line your loaf pan.3. In a mixing bowl add flour, sugar, salt, and baking powder.4. In a separate bowl mix vegetable oil, egg, milk, and vanilla, and yogurt.5. Add to the flour mixture.6. Fold in blueberries and combine.7. Fill your pan.8. Bake for 35 to 45 minutes in the oven or until done you can insert a toothpick in the center and it comes clean.9.
