A Salad A Day
A salad a day. That's been the goal as of late, and I've done pretty well so far. In my attempt to lead a healthier lifestyle, this goal has certainly helped. And it's been fun getting creative coming up with new recipes and of course, sometimes falling back on those classic favorites.
And sometimes, simple and easy is all you need, such as the salad shown above. A bed of arugula, beets, red onion, dried cherries or fresh figs {they're in season now}, pistachios or pecans, and crumbled feta or goat cheese. Lately, I've been spending a lot of time in the kitchen cooking. So my apologies for having another recipe back to back, but cooking is like therapy for me. It makes me feel good to cook good food and share it with family and friends. And I'm getting so excited to start baking for the holidays! I'm already brainstorming a few Halloween recipes to share.
