Ravioli à la Vodka Sauce

If there's a recipe that is a weekly repeat this time of year, it's this one. We buy the ravioli at Trader Joe's and make the vodka sauce at home. Because it's fall, I like to mix the butternut squash ravioli with the truffle mushroom ravioli. You cook the ravioli according to the instructions and then toss them in this delicious homemade vodka sauce. And you're set! A wonderful comfort food for those chilly days.

If you're entertaining, then this one is an easy recipe to save. The sauce is so simple to make and the ravioli are pretty much done -- you just have to boil them and cook them for about 3 minutes. You'll seriously win your guests over this recipe.

Ravioli à la Vodka Sauce2 containers ravioli from Trader Joe's or your favoritevodka sauce followsVodka Sauce1/2 stick {4 tablespoons} unsalted butter2 shallots, finely chopped2/3 cup vodka1 8 oz. can of tomato sauce1 cup heavy cream2 drops Tabasco sauce1/2 teaspoon salt1/4 teaspoon freshly gdorund pepper3/4 cup finely grated Parmigiano-Reggiano, plus more for serving1. Boil water in a large pot for the ravioli.2. Melt butter in a deep 12-inch heavy skillet over moderately low heat.3. Add shallots and cook, stirring occasionally, until it begins to soften.4. Stir in vodka, bring to a simmer, and simmer for 5 minutes or until the vodka cooks down. 5. Add tomato sauce and heavy cream, and simmer stirring occasionally.6. While the sauce cooks, cook the ravioli in the pot of water.7. Reserve 1/2 cup cooking water and drain pasta.8. To the sauce, stir in Tabasco, Parmigiano-Reggiano, salt and pepper.9. Keep sauce warm over very low heat.10. Add ravioli to sauce. Add pasta water if ravioli seems dry.
