Summer Snack: Homemade Popsicles

Now that summer is here, I've revisited our favorite homemade popsicle recipes for healthy summer snacking. But I was craving something a little different than our usual. We've been eating bowls of fresh papaya lately and since I had two ready-to-be-cut papayas sitting on the countertop, well I thought I would try making papaya pops for the kids. I also had fresh rhubarb and strawberries and so I made these from Chef Jen Yee at New York City's Lafayette. They were both a big hit!

I used our Zoku Popsicle Maker but you can use traditional popsicle molds and freeze.

Papaya, Coconut and Citrus PopsiclesBeat the heat with a delicious frozen pop made from papaya, coconut, and citrus!makes 10 pops2 cups chopped papaya½ cup light coconut milk1 cup coconut water3 tablespoons agave nectarzest of 1 lime, optionaljuice of 2 limes, optionaljuice of 1 orange, optionalpinch of saltCombine the papaya, coconut milk, coconut water, agave, lime zest, lime juice, and orange juice in a blender {I use a hand blender}. Puree until smooth. Transfer to Popsicle molds and freeze until set.Strawberry Rhubarb Yogurt PopsiclesChef Jen Yee at New York City's Lafayette makes these refreshing and not-too-sweet icy treats. While she prefers the water content of 2 percent yogurt to yield the best texture, you can substitute whole-milk yogurt.makes 8-10 pops1 lb. strawberries, hulled and minced3⁄4 cup fresh orange juice1⁄4 tsp. kosher salt3 stalks rhubarb, trimmed and minced4 oz. plain 2 percent Greek yogurt1⁄2 cup honey, preferably orange blossomBring strawberries, juice, salt, and rhubarb to a simmer in a 4-qt. saucepan; cook until fruit begins to break down, 3–4 minutes. Let cool and, using a slotted spoon, transfer 1⁄2 cup fruit to a bowl. Transfer remaining fruit mixture to a blender {I use a hand blender}; add yogurt and honey and purée until smooth. Stir in reserved fruit; divide mixture between individual ice-pop molds. Freeze 1 hour, then insert a popsicle stick into each mold; freeze until pops are solid, about 3 hours more. To release ice pops from molds, briefly run the bottom of the molds under warm water.
